Montreal for the epicurean set

Thank you for your article “In Montreal, Dining on Char and Caribou” (Sept. 8). Our vacation to Niagara Falls, southeast Canada and Maine included a stop in Montreal, and, after reading about the enticing restaurants you covered, we decided to try Toque.
It was one of the highlights of our trip. The exquisite dinner affirmed why Normand Laprise has been called Montreal’s most creative chef. His penchant for quality and freshness and his use of indigenous foods were present in the best ways.
We met him in his bustling kitchen, where he graciously chatted and autographed your article. He wrote “Thank you very much” -- in Japanese.
